SpringDocUIConfiguration has been removed in patch release

Version 2.8.3 has the SpringDocUIConfiguration, and 2.8.4 does not. The class was not deprecated, and it's only a patch release.

Please keep in mind that people are using this library, and you should try to maintain some standards.

From what I understand, it was previously indicated in the FAQ to use it, but it is no longer the case: springdoc/springdoc.github.io@234dccb

The change came from #2862.

I assume we can simply remove the bean declaration. @bnasslahsen A mention in the v2.8.4 release/upgrade notes would be nice, as well as a mention of the change of the /webjars path.
