I figured the platform could bump to 3.12.5 since it's already a month old and seems reasonably stable.

I based this on #11386.

Thanks for this PR 👍🏼

Unfortunately, updating a version of Python for our build process is not that simple. There are few of other operation tasks required (e.g. https://github.com/readthedocs/readthedocs-docker-images/blob/main/.circleci/config.yml#L34)

Due to its complexity, we have a policy to update these versions every 6 months; unless it's strictly required: https://docs.readthedocs.io/en/stable/config-file/v2.html#build-tools

Are you having any issue building with 3.12.3 that 3.12.5 fixes?

Not really, noticed 3.12.3 in the logs and thought I could send a PR your way to bump it.
