This commit also allows overriding Kubernetes version per provider in e2e tests to provide flexibility in testing. These variable values are also overrideable via env vars, as per standard CAPI e2e test functionality, e.g. you can specify `KUBERNETES_VERSION_AWS` env var to override the Kubernetes version to run your CAPA e2e tests against.
