doc: generalize Model Monitor documentation from SageMaker Studio tutorial (#1193)

The documentation still reads like a SageMaker Studio tutorial,
but I don't think that's as helpful in general documentation.
It's hard to tell what the point of the code snippets are when
they're clearly just meant to be run.
