Description of your changes

This PR updates the documentation to reflect the status of the v1.x and v2.x releases.

Specifically, I have updated the banner at the top of the docs to reflect the fact that v2 is now GA and available.

I have also updated the upgrade guide and the versioning pages to reflect this, as well as the fact that v1 entered maintenance mode and will reach end-of-life on September 1st, 2024.
