Briefly, I own two PyPortal Pynts Espressif ESP32 Wi-Fi coprocessor with TLS/SSL support built-in. Using the Adafruit CPython Miniesptool, one was able to update to NINA_W102-1.7.3 after 5 or 6 attempts, but the second one has not yet succeeded even after at least 100 reboots. Even the update from 6.1.x to 1.7.1 were quite tedious and took hundreds of attempts. To see the details, please follow this link, Adafruit Customer Service Forum: Pyportal Pynt IO and SSL. Page 5 details my workflow.
Please feel free to contact me if you have any questions about my procedures. Thanks everyone!

I've done a lot of work on the WebSerial ESPTool to improve compatibility with ESP32 including bug fixes and increasng timeouts, so hopefully that will be helpful.
